A Study on the Fate of Enteric Pathogens in the various Alcoholic Beverages and Foods

Abstract
Purpose of this study was to clarify if any relations between the various foods including alcoholic beverages and Korean proper foods and occurrence of various enteric infectious diseases.
Using the Korean proper foods such as Kimchi, Hot-bean-paste, Bean-paste, Soy-souce, Bean-curd, Lettuce, Fresh water fish meat and various alcoholic beverages, the fates of Vibrio eltor (Ogawa type), Vibrio parahaemolyticus (K3), Shigella dysenteriae (A-I) and Salmonella typhi (Ty2) were observed under various temperature conditions.
The following results were obtained:
1. Those pathogenic organisms could survive no longer than 3 minutes in most alcoholic beverages (cf. Table 1) but could be found even after 72 hours in most of Korean proper foods (cf. Table 2, 3 & 4).
2. Salmonella typhi could survive for 18 days at 1¡Æ-5¡ÆC and 14 days at 24¡ÆC-27¡ÆC and Shigella dysenteriae did survive 16 & 11 days respectively.
Vibrio eltor could survive 10 and 8 days and finally Vibrio parahaemolyticus for 8 & 5 days respectively.
